Chicken Salad with Smoked Almonds and Tarragon

  • 1/4 cup minced shallot
  • 2 tbsps fresh squeezed lemon juice
  • 1/2 cup mayonnaise
  • 1/2 cup Green Valley Organics sour cream or crème fraiche
  • 2 tbsps minced fresh tarragon leaves
  • 1 tsp smoked or kosher salt
  • 1/2 tsp fresh ground pepper
  • 1 1/2 lbs chicken breasts, smoked or grilled, skin and bones removed, diced
  • 2/3 cup finely shopped Smokehouse almonds

In a mixing bowl stir together the shallot and lemon juice. Let rest for a few minutes. Add mayonnaise and sour cream or crème fraiche, tarragon, salt and pepper. Whisk to combine. Add chicken and almonds and stir to combine. Chill until ready to use.
