Cranberry Cheese Balls with Orange Zest and Pistachio Nuts
- 1/2 cup fresh cranberries rinsed and dried thoroughly
- 1 tsp packed, micro-planed orange zest (use organic orange)
- 1/2 tsp honey
- 4 ozs Daphne goat chevre, crumbled into pieces
- 4 ozs cream cheese
- 2 ozs salted dry roasted pistachio nuts, finely chopped
In the small bowl or a food processor, pulse chop the cranberries into small bits. Add the zest, honey, chevre and cream cheese. Process just until incorporated and mixture turns pink. Refrigerate mixture, covered. Before serving, roll teaspoon size balls in pistachio nuts. Serve chilled.
