Estero Gold Cornbread Mini Muffins
- 15 OZ. Trader Joe’s Cornbread Mix
- 1 Egg
- 1/2 Cup Oil
- 3/4 Cup Milk
- 1 Tablespoon Honey
- 4 Ounces Diced Estero Gold Cheese
- 1 Teaspoon chopped fresh rosemary
- 1 Teaspoon Black Pepper
Preheat oven to 350*
Beat egg, oil and milk in a large mixing bowl. Mix in cornbread mix, stirring until moistened. Do not over mix.
Fold in honey, pepper and diced cheese and rosemary. Pour batter into 24 greased mini muffin pan.
Bake 12-15 minutes, or until a toothpick inserted in the center comes out clean.
